Mix Dry Ingredients
Grab a large mixing bowl and add 2 cups of old-fashioned rolled oats to it.
Toss in 1 cup of mixed nuts, almonds, and pecans. Then, stir until well combined.
Sprinkle ½ tsp ground cinnamon and ⅛ tsp salt over the dry ingredients and mix everything together evenly.
Prepare The Syrup
Take a small bowl for preparing the syrup and pour in ¼ cup of honey to it.
Add 2 tbsp of maple syrup to the mixture.
Mix 1½ tbsp of vanilla extract and ¼ cup of coconut oil into the syrup and stir until well blended.
Pour the syrup over the dry ingredients in the bowl and use a spatula to mix everything until the oats and nuts are well coated.
Coat The Granola and Spread Them
Pour the syrup over the dry ingredients in the bowl and use a spatula to mix everything until the oats and nuts are well coated.
Spread the granola mixture onto the prepared baking sheet that you prepared earlier.
Bake, Cool and Enjoy!
Place the baking sheet in the preheated oven.
Bake the granola for about 25-30 minutes. Flip the granola halfway through to ensure even toasting.
Once the nut granola is golden brown, remove it from the oven and let the granola cool completely on the baking sheet to make the granola extra crunchy.
Add your favorite toppings and enjoy a super tasty homemade vanilla almond granola!
