Instructions

Prepare The Chicken

  • Place 2 large chicken breasts on a sheet of parchment paper on a chopping board.
  • Cover the chicken with another parchment paper and use a meat mallet or a rolling pin to gently pound each breast to 1/2-inch thickness. Set the chicken aside for later use.

Marinate The Chicken

  • In a mixing bowl, pour 2 tbsp of olive oil and 2 tbsp of lemon juice.
  • Add 3 cloves of minced garlic and ¼ tsp of salt into the mixture.
  • Season the marinade with ½ tsp of black pepper, ½ tsp of red chili powder, and ½ tsp of chili flakes.
  • Sprinkle in ½ tsp of oregano, ½ tsp of cumin powder, and ½ tsp of smoked paprika powder.
  • Whisk all the ingredients together until the mixture is smooth and well blended.
  • Use tongs to dip the chicken breasts into the marinade and let them soak for 30 minutes.

Cook The Chicken

  • Preheat a grill pan or griddle pan over high heat and spray it with a little oil to prevent sticking.
  • Place the marinated chicken breasts into the pan using tongs.
  • Cook the chicken for 5-6 minutes on each side and flip to the other side once it’s cooked and golden brown.
  • Remove the chicken pieces from the heat and transfer them to a plate.
  • Use a sharp knife to chop the grilled chicken breast into bite-sized pieces and set it aside for later use.

Prepare The Wrap Sauce

  • In a mixing bowl, add ½ cup of Greek yogurt and 2 tbsp of sriracha sauce.
  • Squeeze 1 tbsp of fresh lemon juice into the mixture.
  • Sprinkle ¼ tsp of salt and 1 tsp of garlic granules over the sauce.
  • Mix in 1 tbsp of chopped parsley and ½ tsp of black pepper.
  • Use a fork to mix everything until smooth and set it aside.

Assemble The Wrap

  • Take a large tortilla and lay it flat on a board.
  • Spread a generous amount of the prepared wrap sauce over the tortilla.
  • Add chopped lettuce as a base layer and place the sliced grilled chicken pieces on top of the lettuce.
  • Add chopped onion, chopped tomatoes and chopped cucumber as fresh toppings.

Fold, Serve and Enjoy!

  • Fold in the two sides of the tortilla and roll it up tightly from the bottom like a burrito.
  • Serve the wrap with a side of sliced lemon and garnish it with fresh coriander.
  • Enjoy your delicious grilled chicken wrap.
