Equipment

Ingredients

  • 1 cup / 240 g Heavy Cream cold
  • ½ cup / 155 g condensed milk
  • 2 tbsp / 30 g Greek Yogurt
  • 1 tsp / 5 ml Vanilla essence
  • 1 cup / 125 g Apple diced
  • 1 cup / 150 g Green Grapes halved
  • 1 cup / 165 g Mango diced
  • 1 cup / 145 g Strawberry quartered
  • 1 large / 135 g Banana sliced
  • 1 tbsp / 8 g chopped Pistachio
  • 2 tbsp / 20 g chopped Cashew

Instructions

Prepare the cream mixture.

  • In a large bowl, combine 2 cups cold heavy cream (fresh cream), ½ cup condensed milk, 2 tbsp Greek yogurt, and 1 tsp vanilla essence. Beat them until soft peaks form using an electric mixer or whisk. This means that the mixture will be thick enough to stand on its own while remaining soft at the same time. Basically, the consistency will be like custard.

Mix the fruits and nuts.

  • In another big bowl, mix one cup of diced apple, one cup of halved grapes, one cup of diced mango, one cup of quartered strawberries, and one large sliced banana. Add one tablespoon of chopped or crushed pistachios, as well as two tablespoons of cashews, also chopped. Toss gently so that all fruit pieces touch the nuts in any order.

Combine Mixture

  • Over the mixed fruits and nuts, pour the whipped cream mixture. With a spatula, carefully fold the cream into the fruit mixture until all the pieces are coated. To remain light and fluffy, avoid overmixing it.

Serve and garnish.

  • Serve the delicious Fruit Cream in your favorite serving bowls or glasses. On top of that, sprinkle a few more chopped pistachios to add some extra elegance. Serve immediately if you want it to be soft and moist, or refrigerate for 30 minutes if you prefer it to be colder than that.
