Homemade Mayonnaise Recipe

Ingredients

  • 2 Egg Yolks Room Temperature
  • 200 ml Vegetable Oil
  • ¼ tsp / 2 g Salt
  • ¼ tsp / ¼ tsp Black Pepper
  • 1 tsp / 5 ml White Vinegar
  • 1 tbsp / 15 ml Fresh Lemon Juice

Instructions

Whisk Egg Yolks

  • Crack 2 room temperature eggs and separate the whites from the yolks. Place the egg yolks into a mixing bowl.
  • Using a whisk, beat the egg yolks until they become smooth and slightly thickened.

Add Oil Gradually

  • Take 200 ml of oil and start by adding a few drops of oil to the egg yolks while whisking continuously.
  • Continue adding the oil, a small amount at a time, to prevent the egg yolks from curdling. Keep stirring the mixture between each addition.
  • The process should take about 5-6 minutes in total, and the end result will be a thick, creamy mayonnaise.

Season The Mayonnaise

  • Add ¼ tsp of salt to season the mixture.
  • Sprinkle ¼ tsp of black pepper over the mayonnaise.
  • Pour 1 tsp of white vinegar and 1 tbsp of lemon juice into the mixing bowl.
  • Whisk the mixture again for 1 minute or until everything is combined.

Serve and Enjoy!

  • The mayonnaise should be whisked until it’s creamy and thick enough to hold its shape. You can check its doneness by lifting the whisk and seeing if the mayonnaise clings to it without dripping.
