Ingredients

For Marination

  • 6 large-size Eggs Hard-Boiled
  • ¼ tsp / ¼ tsp Salt
  • ¼ tsp / ¼ tsp Turmeric Powder
  • ¼ tsp Red Chili Powder

For Cooking

  • 2 tbsp / 30 ml Cooking Oil
  • 2 tbsp / 30 ml Clarified Butter Ghee
  • 2 Cardamom
  • 2 Cloves
  • 1 Cinnamon Stick
  • 2 Bay Leaves
  • ½ tsp / 1 g Whole Cumin
  • ½ tsp / 1 g Chili Flakes
  • 1 medium size Onion Finely Chopped
  • 2 Green Chili
  • 1 tbsp / 15 g Garlic Ginger Paste
  • ½ tsp / 3 g Salt
  • ¼ tsp Black Pepper
  • ½ tsp / 1 g Garam Masala
  • ½ tsp / 1 g Kashmiri Chili Powder
  • ½ tsp / 1 g Cumin Powder
  • ¼ tsp Turmeric Powder
  • ½ tsp / 1 g Red Chili Powder
  • ½ tsp / 1 g Coriander Powder
  • 2 ¼ cup / 532 ml Water Divided
  • 2 medium-size Tomatoes Finely Chopped

For Garnishing

  • 2 Green Chilis
  • 1 tsp / 1 g Fenugreek Leaves Dried
  • 2 tbsp Coriander Leaves

Instructions

Marinate The Eggs

  • In a mixing bowl, place 6 large hard-boiled eggs. Make 3-4 slits on each egg using a knife.
  • Sprinkle ¼ tsp of salt, ¼ tsp of turmeric powder, and ¼ tsp of red chili powder over the eggs.
  • Gently shake the bowl to coat the eggs with the spices.

Fry The Eggs

  • Heat a deep fry pan over medium heat.
  • Pour 2 tbsp of cooking oil into the pan.
  • Add the marinated eggs and shallow fry the eggs for 2-3 minutes. Stir occasionally until the eggs turn light golden.
  • Transfer the eggs to a plate and set it aside.

Saute The Spices

  • In the same pan, add 2 tbsp of clarified butter or ghee.
  • Add cardamoms, cloves, 1 cinnamon stick, and bay leaves to the pan.
  • Sprinkle ½ tsp of whole cumin and ½ tsp of chili flakes. Stir with a spatula to prevent burning.
  • Add 1 medium size finely chopped onion and 2 green chilis to the spice.
  • Stir and cook for 2-3 minutes.

Prepare The Curry

  • Add 1 tbsp of garlic ginger paste to the pan.
  • Sprinkle ½ tsp of salt, ¼ tsp of black pepper, and ½ tsp of garam masala over the mix.
  • Add ½ tsp of Kashmiri chili powder and ½ tsp of cumin powder to add flavor to the dish.
  • Add 1/4 tsp turmeric powder, 1/2 tsp red chili powder, and 1/2 tsp coriander powder to the pan and stir to mix everything well.

Combine Eggs And Masala Gravy

  • Pour ¼ cup of water into the pan. Stir well and cook until oil separates.
  • Add 2 medium-sized finely chopped tomatoes and stir to coat them with the spices.
  • Bring the curry to a simmer and add 1 cup of water. Stir and mix all the ingredients well.
  • Cover the pan and cook for 5-6 minutes.
  • Open the lid and stir the curry.
  • Add the fried eggs to the pan and stir to coat them with the spices.
  • Cover and cook for 3-4 minutes over low heat.

Garnish and Serve

  • Open the lid of the pan and stir the dish.
  • Garnish the egg masala with 2 green chilis, 1 tsp of dried fenugreek leaves, and coriander leaves.
  • Stir to combine everything and serve it hot with plain rice.
