Tomato cucumber salad stays fresh for a couple of days in the refrigerator, so it can be made earlier and stored in the fridge to enjoy later.

Ingredients

  • 1 large size Cucumber sliced 1/4 inch thick and halved
  • 3 small size Tomatoes quartered
  • 1 medium size Ripe avocado cut into small pieces
  • ½ Red onion sliced
  • 2 tbsp Fresh coriander chopped
  • 2 tbsp / 30 ml Fresh lemon juice
  • 1 tbsp / 15 ml Olive oil
  • ½ tsp / 3 g Salt
  • ½ tsp / 1 g Black pepper

Instructions

Prepare Salad Ingredients

  • First, slice the cucumber, tomato, avocado, and onion-like half moons or dice them according to your preference.
  • Add cucumbers, tomatoes, avocado, onion, and coriander to a large bowl.

Make Salad Dressing and Mix

  • Now, add the lemon juice and olive oil and sprinkle with salt and black pepper to the bowl.
  • Then, gently mix everything until the dressing coats them together. Do not overmix; otherwise, avocado can be mushy.

Serve and Enjoy!

  • You can serve the salad immediately or cover the bowl with plastic wrap and leave it for 10 to 15 minutes to melt the flavors.
  • Or you can refrigerate for up to 24 hours.
