- 4 tbsp / 56 g Mayonnaise
- 1 tbsp / 20 g Yogurt
- 1 tsp / 5 g Dijon mustard
- 1 tbsp / 15 ml Lemon Juice
- ½ tsp / 3 g Salt
- ½ tsp / 1 g Black pepper
- 1 tsp / 3 g Garlic minced
- 2 cups / 280 g shredded Chicken boiled
- ½ cup / 66 g Cucumber finely chopped
- ¼ cup / 40 g onion finely chopped
- 2 tbsp / 6 g chopped coriander
- 2 slices of / 2 slices of Bread for each sandwich
- 1 tsp / 5 g Butter each side
Make Chicken Sandwich Filling
Mix mayonnaise, yogurt, dijon mustard, and lemon juice in a medium-sized mixing bowl. Sprinkle some salt and black pepper, along with some minced garlic. Give everything a good mix, to form a smooth sauce.
Transfer the shredded chicken into a large mixing bowl, pour the sauce over the chicken shreds, and add the finely chopped cucumber and onion. Mix well and sprinkle some finely chopped coriander on top. Give it a final mix.
