For Egg Mixture
- 2 large-size Eggs.
- 2 tbsp / 20 g Onion Chopped.
- 1 tbsp Coriander Chopped.
- 2 Green Chilis Chopped.
- ½ tsp / 1 g Chili Flakes.
- ¼ tsp / 1 ½ g Salt.
- ¼ tsp Black Pepper.
For Cooking
- 2 Frozen Paratha.
- 1 tbsp / 15 ml Oil.
- ½ cup / 57 g Mixed Cheese Cheddar and Mozzarella.
Prepare The Egg Mixture
Take a mixing bowl and crack 2 large eggs into it.
Add 2 tbsp of chopped onion and 1 tbsp of chopped coriander to the eggs.
Add 2 chopped green chilis and ½ tsp of chili flakes for spiciness.
Sprinkle ¼ tsp of salt and ¼ tsp of black pepper over the egg mixture.
Use a fork to mix all the ingredients together and set the mixing bowl aside for later use.
Cook Parathas
Grab a skillet and place it on the stove over medium heat.
Place one of the 2 frozen parathas in the skillet.
Fry until the bottom side turns light brown and puffs up slightly.
Flip the paratha once one side is done. Gently press on the paratha to puff up the paratha even more.
Once both sides are done, remove the paratha from the skillet and transfer it to a plate. Repeat the same process with the second paratha.
Combine Egg Mixture and Parathas
Place the same skillet on the stove over medium heat.
Add 1 tbsp of oil to the skillet.
Pour half of the prepared egg mixture into the skillet. Use the back of a spoon to spread the mixture across the skillet.
Allow the egg to firm up a little bit.
Sprinkle half of ½ cups of cheddar and mozzarella cheese mixed together over the egg mixture. Allow the cheese to melt slightly.
Place one cooked paratha on top of the egg and cheese mixture. Gently press down on the egg paratha.
Using a slotted spoon, flip the egg paratha and fold it in half. Remove the paratha from the heat and transfer it to a plate.
Repeat the same steps with the remaining egg mixture, cheese, and paratha.
Once both egg parathas are cooked, slice them in half and enjoy the delicious cheesy delight.
