Add Wet Ingredients For Cookie Dough
Grab a mixing bowl and add ½ cup of brown sugar to it.
Measure out ½ cup of granulated sugar and ½ tsp salt, then add them into the mixing bowl.
Pour ½ cup of melted unsalted butter into the dough mixture.
Whisk the ingredients together until well combined.
Add 1 tsp of vanilla essence and crack 1 large egg into the bowl. Whisk again until the mixture is smooth.
Add Dry Ingredients For Cookie Dough
Place a sieve over the mixing bowl and add 1 and ¼ cups of all-purpose flour to it.
Sprinkle ½ tsp of baking soda over the flour.
Sift the dry ingredients into the bowl and whisk to combine the dry and wet ingredients to form a dough.
Add 1 cup of chocolate chips to the dough and fold them using a spatula.
Refrigerate the cookie dough for 10-15 minutes.
Melt Butter and Chocolate
Place a cooking pot on the stove and bring it to a boil.
Set a small bowl over the pot with the simmering water and add ½ cup of butter and 200 grams of semi-sweet dark chocolate to the bowl.
Stir the mixture with a spatula until the chocolate and butter are fully melted.
Remove the bowl from the heat, let it cool, and set the bowl aside for later use.
Prepare The Brownie Batter
In a separate mixing bowl, mix ½ cup of brown sugar with ½ cup of granulated sugar.
Crack 3 medium-sized eggs into the bowl. Add the eggs one at a time and whisk after each addition until fully combined.
Sprinkle in ¼ tsp of salt and 1 tsp of vanilla essence.
Pour the melted chocolate-butter mixture you prepared earlier into the batter and whisk to mix everything.
Place a sieve over the mixing bowl and sift 1/2 cup of all-purpose flour and ¼ cup of cocoa powder into it.
Gently fold the dry ingredients into the wet ingredients until just combined.
Assemble The Brookies
Place a 9x9-inch baking pan on a flat surface and grease it with butter.
Line the baking pan with parchment paper and pour the brownie batter into the prepared pan. Spread the batter evenly across the pan using a spatula.
For the chocolate chip cookie layer, use a cookie scoop to form different-sized balls from the cookie dough and place them on top of the brownie batter.
Sprinkle additional chocolate chips over the cookie balls for extra flavor.
Bake The Brookies
Place the baking pan in a preheated oven at 350 degrees Fahrenheit or 175 degrees Celsius for 30 minutes. Insert a toothpick into the center - it should come out with a few moist crumbs.
Once baked, remove the brookies from the oven and let them cool completely in the pan.
Slice, Serve and Enjoy!
Use the overhang parchment paper to lift the brookies out of the pan and transfer them to a chopping board.
Grab a knife to slice the brookies and dip the knife into hot water before each cut.
Slice the brookies into desired sizes and enjoy your delicious brookies straight from the oven!
