I have made this recipe with easy-to-find, simple ingredients so that you can whip up a delicious meal in no time. Vegetables

I have opted for carrots, celery, onion, potatoes, cabbages, and peas for this recipe. Add beets, sweet potato, and squash for a sweeter taste. You can use broccoli, green beans, and cabbage to give your soup a more crunchy texture. However, keep in mind that broccoli brings more of a slightly bitter taste to the dish. 

For a creamy finish, you can use cauliflower and tomato. Just blend the cauliflower and stir it into the vegetable broth you will use later to make this great recipe.

Proteins

Although I haven’t used any protein element in this soup, you can add your preferred choice of protein to make it more energizing. 

Beans and chickpeas are excellent sources of protein, high in fiber, and help digest food easily. Lentils are also a good option if you are thinking about losing weight, as they are low in fat and calories yet full of antioxidants and essential minerals to keep you energized. 

For a vegan diet, tofu is the perfect plant-based protein that absorbs all the delicious flavors of the soup easily. You can add cheese or yogurt for a creamier texture. Shredded chicken or turkey pieces are also a great addition if you want to make the soup more filling and nutrient-rich.

Broths

Instead of the vegetable broth that I have used in this recipe, you can use chicken broth to add more richness and depth to the dish. For a creamy and nutty variation, use coconut broth instead. You can also use crushed tomatoes, tomato paste, or lemon juice to add tanginess to the simple vegetable soup.

Fruits and Nuts

If you aren’t afraid of going out of the traditional way, why not use some fruits and nuts to give your soup a little twist? Let those apples and peanuts shine!

Just before serving, add some sliced or chopped almonds, cashews, or walnuts and enjoy the crunchy additions they bring to the dish. You can also add fruits like apples or pears to add a slight sweetness to the soup.

Before you fire up that stove and grab a spoon to start cooking, let me give a few pointers so you can make this easy and delicious soup on your first try!

  1. While preparing the vegetables for cooking, make sure they are all cut in uniform sizes. Cutting them all in the same size will prevent vegetables from being undercooked or overcooked.
  1. While cooking the vegetables, follow the time given in this recipe. Overcooking them will make them mushy and unpleasant to eat. Cook them until they become just tender.
  1. Add the carrots and other hard vegetables early in the cooking process and softer vegetables like cabbages or peas later to ensure they are all cooked evenly.
  1. Adjust the soup’s thickness to your preference. If the soup feels too runny, reduce the heat to low and simmer until it gets to your desired consistency. If it’s too thick, add more water or broth accordingly.
  1. Taste, taste, and taste! I can’t emphasize enough how crucial it is to taste everything in the soup-making process! Taste before and after you add salt and seasonings and adjust accordingly. It’s best to start with a small quantity of salt and gradually increase the amount as you go. Do NOT overpower the soup’s flavor with too much salt or seasoning, as that will ruin the whole experience. 
  1. It’s a good practice to never overcrowd your pot no matter what you are cooking. The same theory applies here as well. Avoid adding too many vegetables to prevent overcrowding your pot. Cook in batches or change the pot to a larger one if you are preparing a large quantity of soup.
  1. While blending the vegetables, do NOT go overboard and blend too much! Over-blending the soup will result in a puree-like texture, which would taste unpleasant. Blend a small portion to add just the right amount of thickness to thicken the soup.

Ingredients

  • 2 tbsp / 30 ml Olive Oil
  • 1 tbsp / 8 g Garlic (Chopped)
  • 1 tbsp / 7 g Ginger (Chopped)
  • 1 medium-size Onion (Chopped)
  • 3 medium-size Carrots (Chopped)
  • 2 sticks Celery (Chopped)
  • ½ tsp / 3 g Salt
  • ½ tsp / ½ tsp Mixed Herbs
  • ½ tsp / 1 g Black Pepper
  • 3 tbsp / 23 g All-Purpose Flour
  • 1- liter / 1,000 ml Vegetable Stock
  • 2 cups / 420 g Potatoes (Diced)
  • 1 cup / 70 g Cabbage (Chopped)
  • 1 cup / 145 g Peas (Frozen)
  • 2 tbsp Coriander (Chopped)

Instructions

Saute Garlic and Ginger

  • Place a cooking pot on the stove over medium heat.
  • Pour 2 tbsp of olive oil in a large pot and wait for the oil to get heated.
  • Add 1 tbsp of chopped garlic and 1 tbsp of chopped ginger into the pot.

Add Vegetables

  • Add 1 medium-sized chopped onion, 3 medium-sized chopped carrots, and 2 sticks of chopped celery into the pot.
  • Stir everything with a spatula and cook until the veggies start to soften.

Mix Seasonings

  • Sprinkle ½ tsp of salt and ½ tsp of mixed herbs over the vegetables.
  • Mix ½ tsp of black pepper to add spiciness.
  • Stir well and coat the vegetables with the seasonings.

Add Flour and Vegetable Stock

  • Add 3 tbsp of all-purpose flour to the pot.
  • Stir continuously and dissolve the flour into the mix.
  • Pour a small amount of the 1-liter vegetable stock over the vegetable mixture.
  • Stirring constantly coats the vegetables with the stock and lets them simmer.

Add Potatoes and Cabbage

  • Add 2 cups of diced potatoes and 1 cup of chopped cabbages to the pot.
  • Stir and combine all the ingredients.

Pour Remaining Stock, Cover and Simmer

  • Pour the remaining vegetable stock into the mix and bring it to a boil.
  • Stir well with a spatula, cover, and let the soup simmer for 15-20 minutes. At this point, reduce the heat from medium to low.

Blend Vegetable Chunks

  • Open the cooking pot lid and stir the soup with a spatula.
  • Using a hand blender, blend some chunks of vegetables to create a thickened texture for the soup.

Add Frozen Peas

  • Add 1 cup of frozen peas to the soup.
  • Stir to combine everything and cook for another 5 minutes.

Garnish, Mix and Enjoy!

  • Garnish the soup with 2 tbsp of chopped coriander.
  • Stir to mix everything thoroughly, then remove the pot from the stove.
  • Take a spoonful of soup into a serving bowl and enjoy a delicious homemade vegetable soup.
