Controlling The Heat Level In Spicy Egg Pitha Recipe
Adding spices to any recipe makes it tastier. However, there’s always a certain level of spice we can tolerate- any more than that and it becomes overwhelming!
Here are a few pointers to keep in mind to control the heat level in spicy egg pitha:
Varieties Of Chili Powder
To ensure you don’t make the pitha too spicy, start with a small amount and see if you need more. The spiciness in this recipe comes from 3 sources: Black pepper, chili powder and green chilies. So, depending on the amount and variation of these ingredients, the heat and flavor of the dish will vary.
For instance, chili powder comes in many varieties including Kashmiri chili powder, cayenne powder and paprika. If you want to go for minimal heat with a warm flavor, paprika is the best option for you. Kashmiri chili powder is also mild in flavor with a bonus of vibrant red color that enriches any dish it’s added to.
For a bold, hotter flavor, cayenne pepper is a suitable option. Keep in mind that cayenne pepper is very spicy, so try a small amount first and taste the batter to see if this is what you want.
Customizing The Heat Level
You can customize the spiciness in this recipe by adjusting the quantity of the spices and adding or removing certain ingredients.
For a gentle kick, begin with half of the recommended chili powder. As my recipe calls for ½ tsp of chili powder, use ¼ tsp instead for a milder flavor. While using the fresh chilies, remove the seeds to reduce the heat level significantly.
My recipe is crafted for a medium level of spice, but if you prefer a slightly hotter flavor- consider using a combination of hot and mild chili powders. For instance, you can mix ½ tsp of Kashmiri chili powder with ½ tsp of cayenne powder to add a moderate level of spice and vibrant color to the egg pitha.
You can also use jalapenos instead of green chilies for a hotter and more flavorful kick in your pitha. Keep the seeds and membrane intact for intense heat or remove it if you prefer a milder version.
If you are up for a challenge, a super-hot egg pitha might just be what you are looking for! To amp up the heat, use 1 tsp of chili powder, preferably cayenne pepper or a combination of cayenne pepper and chipotle chili powder.
Personally, I would recommend layering the spices to build up the heat gradually. To do that, you need to start with chili powder and green chilis. Once you taste and feel like you can handle more, serve the pithas with a hot sauce to finish the dish on a fiery note! That way, you get way more control over the spice level and don’t feel overwhelmed by making a mistake.

Chutneys are my go-to dish to pair with spicy egg pitha. Depending on your mood, you can choose from a variety of options including mint chutney, tamarind chutney, tomato chutney, coriander chutney and yogurt dip.
Curry
Pairing egg pitha with a savory curry gives you the experience of enjoying a full-course meal. You can enjoy the egg pitha with mutton masala savory curry, chicken masala curry or a healthy vegetable curry. The gravy of these curries compliment the crispy texture of the egg pitha, making it an ideal choice for lunch or supper.
Cooling Sides
As the dish is a bit spicy, a cool side dish would be a great option to provide relief from the heat. A side of raita, sour cream or even a bowl of fresh salad helps balance the spice level and refresh your palate.

Ingredients
- 1 Cup / 160 g Rice Flour
- ¼ Tsp / 1.23 g Salt
- ¼ Tsp / 1.23 g Black Pepper
- ½ Tsp / 2.46 g Cumin Powder
- ½ Tsp / 2.46 g Red chili powder
- ¼ Tsp / 1.23 g Turmeric powder
- 1 Tsp / 4.93 g Garlic-ginger paste
- 1 Tbsp / 14.79 g Grated onion/ onion paste
- 2 Large / 2 Large Eggs
- ¼ Cup / 62.5 g Water
- 2 Medium size / 2 Medium size Chopped green chilies
- 1 Tbsp / 14.79 g Chopped coriander
Instructions
- First, in a bowl take a cup of rice flour.
- Then add the salt, pepper, cumin powder, chili powder, turmeric powder and give them all a quick mix.
- Now add garlic ginger paste and grated onion followed by 2 large eggs and give them another mix.
- Gradually add room temperature water to make the batter. The batter shouldn’t be very thin but thin enough to be poured or dropped from a spoon.
- Once the batter comes together whisk it for 3-4 minutes straight, this incorporates air in the batter which makes them puffy and fluffy.
- Then add the chopped chilies and coriander leaves.
- Let the batter rest for 10 minutes.
- Now heat up enough oil to deep fry the pithas.
- When the oil is heated up, turn the flame into medium and pour a spoonful of batter into the hot oil.
- After about 30 seconds flip it over and the pitha will be puffed up then. Flip the pitha again and repeat the same process until its golden brown or fully cooked through.
- Once the pitha is fried properly take it out in a paper towel and similarly fry the rest.
- Serve them hot. You can serve them on its own or with chicken/beef/mutton curry.

You have to deep fry the pithas and you can fry 2-3 pithas together in a large pan.
