- ½ tsp / 1 g Black Pepper
- 1 tbsp / 8 g All-Purpose Flour
For Boiling Pasta
- 1 tbsp / 18 g Salt
- 3 cups / 180 g Rigatoni Pasta
For Cooking
- 2 tbsp / 30 ml Cooking Oil
- 2 tbsp / 28 g Butter
- 5 cloves Garlic (Minced)
- 1 tsp / 2 g Chili Flakes
- 1 small-size Onion (Finely Chopped)
- 1 tbsp / 16 g Tomato Paste
- ¼ cup / 28 g Sun-Dried Tomatoes
- ¼ cup / 6 g Fresh Basil
- 1 cup / 237 ml Chicken Stock
- 1 cup / 237 ml Heavy Cream
- ¼ tsp / 1 ½ g Salt
- 1 tsp / 2 g Dried Oregano
- ½ tsp / 1 g Black Pepper
- 1 cup / 100 g Parmesan Cheese
- Fresh Basil Leaves (For Garnish)
Instructions
Marinate The Chicken
- Take 2 medium-sized boneless chicken breasts and cut them into cubes.
- Place the chicken pieces into a mixing bowl.
- Sprinkle ½ tsp of salt and 1 tsp of garlic granules over the chicken.
- Add 1 tsp of paprika and ½ tsp of black pepper into the bowl.
- Add 1 tbsp of all-purpose flour to the mixture.
- Use a spatula to mix all the ingredients well.
- Set the bowl aside for later use.
Boil The Pasta
- Place a cooking pot filled with water on the stove and bring it to a boil.
- Sprinkle 1 tbsp of salt into the water.
- Pour 3 cups of rigatoni pasta into the boiling water.
- Boil the pasta for 11-13 minutes or as per the package instructions.
- Remove the pot from the heat, drain and wash the pasta with cold water.
Fry The Chicken
- Grab a skillet and put it on the stove over medium heat.
- Pour 2 tbsp of cooking oil into the skillet.
- Using tongs, place the marinated chicken pieces into the hot skillet one by one.
- Cook the chicken pieces for 2-3 minutes on each side. Flip the pieces once one side is done.
- Once the chicken is cooked and golden brown, remove the pieces from the heat and transfer them to a plate.
Prepare The Sauce
- In the same skillet, add 2 tbsp of butter. Stir the butter and allow it to melt.
- Add 5 cloves of minced garlic and 1 tsp of chili flakes to the melted butter. Saute the ingredients for 30 seconds.
- Add 1 small-sized finely chopped onion to the skillet. Stir and saute for 2-3 minutes.
- Mix in 1 tbsp of tomato paste and ¼ cup of sun-dried tomatoes.
- Toss in 1/4 cup of fresh basil and use a spatula to mash the tomatoes a bit.
- Stir in 1 cup of chicken stock and 1 cup of heavy cream to the sauce. Let the sauce come to a simmer.
- Sprinkle ¼ tsp of salt, 1 tsp of dried oregano and ½ tsp of black pepper into the mix. Stir well to combine.
- Add 1 cup of parmesan cheese to the sauce and stir continuously until the cheese is fully melted.
