The consistency of your batter must resemble that of heavy cream. Which means that it should neither be too thick nor too runny. If the batter appears too thick, add a few tablespoons of milk to it. And if it’s too runny, then add some all-purpose flour to achieve the desired consistency.

Even Cooking

Even heat distribution throughout the pan is necessary, so ensure the pan is heated well before pouring the Crepes batter into it. But the pan mustn’t be too hot as this might burn the crepes.

Follow the technique

To prepare Crepes that are soft, round, and don’t break, you must follow the right technique. After you have poured the batter into the hot pan, make sure to swirl it quickly, this will spread the batter evenly into the pan, ensuring the right texture and even cooking.

Ingredients

  • 1 cup / 238 ml Milk
  • ½ cup / 120 ml water
  • 2 large Eggs
  • 2 tbsp / 24 g Sugar
  • tsp Salt
  • 2 tbsp / 28 g Unsalted butter
  • 1 cup / 125 g All purpose flour

Instructions

Make the Crepe Batter

  • Add the milk and water to a large jar to make your delicious crepes.
  • Crack the eggs into the milk and water and add sugar, salt, and melted butter. Whisk well until well combined.
  • Sieve the all-purpose flour into a mixing bowl and gradually add the wet ingredients to the dry ones. Mix everything well.
  • Let the batter rest in the refrigerator for 1 hour or at least 30 minutes.

Cook the Crepes

  • Heat some butter in an 8-inch pan or skillet over medium heat.
  • Once heated, pour a cup of batter into the center of the pan and swirl the batter evenly. Cook on both sides and repeat with the remaining batter.
