Before we get straight into the recipe, let’s have a closer look at the ingredients that are used to make this delectable Pound Cake:

Unsalted Butter:

Sugar:

All-purpose Flour:

For cake purposes, flour is the most important ingredient. You can also use cake flour for baking cake but for this recipe, we need all-purpose flour. Similarly in this recipe, all-purpose flour provides structure to our pound cake making it stable enough to hold the weight of butter and sugar. The outcome is a soft, rich, and stable pound cake.

Baking Powder:

Baking powder is a raising agent that is commonly used in cake-making. It is made from an alkali, bicarbonate of soda, and an acid, cream of tartar, plus a filler like cornflour or rice flour which absorbs moisture. It is essential to make sure that our Easy Butter Pound Cake gets a good rise.

Ingredients

  • 1 cup / 225 g unsalted butter (room temperature)
  • 1 cup / 200 g sugar
  • 1 tbsp / 6 g lemon zest
  • 4 large eggs
  • cup / 76 g sour cream (room temperature)
  • 1 tbsp / 14 ml vanilla essence
  • 1 ½ cup / 185 g all-purpose flour
  • 1 tsp / 4 g baking powder

Equipments

  • 9X5 Loaf Pan
  • Silicon Brush
  • Electric Whisk
  • Flat spatula

Instructions

Preparing the Pan

  • Embark on your baking journey by preparing a 9X5 loaf pan. Brush it generously with butter and dust with some flour. Shake off the excess and make sure it is well covered with flour. This step is crucial, as it will help prevent the cake from sticking to the pan and will even add some extra flavor to it.

Creating the Sugar-Butter Symphony

  • In a large mixing bowl, mix in the unsalted butter at room temperature and sugar along with some freshly grated lemon zest. For mixing use a high-power electric whisk to beat this mixture until its creamy and soft peaks have formed. This step is important as the beating helps incorporate air into the batter, which leads to a light and fluffy cake in the end.

Crack the eggs: One at a time

  • Cracking eggs into the cake batter and mixing it is pretty common, but I like to do things my way. So according to me crack one egg into the mixture and give it a good mix using the electric whisk. Take your time and trust this process. Repeat with all the other eggs.

Next Step

  • Next, pour the sour cream and a few drops of vanilla essence into the batter. Beat once again until everything is incorporated. Remember to smell the batter at least once at this stage and you will realize how delicious and heavenly it smells.

Dry Ingredients Hour

  • It’s time to bring our dry ingredients to the baking ground. Sift in the all-purpose flour and baking powder into the creamy batter. Beat the mixture until everything is well combined and the mixture looks homogenously exciting. Make sure to mix it well but in a gentle way and avoid overmixing.

The Final fold

  • Once the mixture is well combined. Put your spatula to work and give the batter a final fold. Do this step gently using the cut-and-fold technique and scrape down the sides to ensure that everything is mixed well.

It’s Baking Time!

  • Gently pour the batter into the prepared loaf pan, and smoothen the top using the spatula. Carefully tap the pan a few times on your counter to get rid of any big air bubbles. Bake this until a toothpick inserted comes out clean with a few crumbs attached, in a preheated oven at  325°F (165°C) for about 50-60 minutes. It is worth the wait, you’ll know!

Resting and cooling

  • Once the cake is baked and has a golden brown color on top, remove the cake from the oven and let it cool down to room temperature on a wire rack.

Serving

  • Once your delicious Pound cake has cooled down completely. Demould it carefully and cut it into 1-inch thick slices. Serve the delicious and Easy Pound Cake as it is or experiment with your favourite toppings.
