There’s something truly comforting and healing about a steaming bowl of chicken stew recipe, especially when you’re feeling under the weather and in need of extra warmth and care. Good news for the spice lovers, I have a spicy version of this great chicken stew recipe for you! 

Jalapenos, habaneros, or chili flakes create a satisfying, mouth-watering sensation that makes the dish even more tasteful. The heat from the spices helps balance the other ingredients of the stews and creates a warm and delicious contrast. 

Add the chopped jalapenos, habaneros, or chili flakes while you saute the onions, ginger, and garlic in the pan. Keep stirring the mixture for a few minutes before adding the chicken back to the pan or crockpot. Continue with the recipe as directed, and you’ll enjoy a stew with a deliciously spicy kick!

Creamy Chicken Stew

Creamy chicken stew tastes different from the basic one because of its rich and smooth texture. The creaminess comes from Greek yogurt, heavy cream, or half-and-half.  The cream or yogurt blends with the stew and coats the tender chicken and vegetables in a silky, velvety sauce. If your stew has too much spice or seasonings by mistake, you can use these ingredients to mellow them out as well!

For a creamy chicken stew, add the yogurt or cream towards the end of cooking. Reduce the heat to low or remove the pot from the cooker to avoid curdling. Once added, simmer the stew for an additional 10 minutes so that the cream or yogurt gets the chance to blend in perfectly.

To add leafy greens to your stew, you must first wash and chop them into bite-sized pieces. Prepare your chicken stew as usual and add the greens during the last 10-15 minutes of cooking. The thing with leafy greens is that you need to cook them just right, as overcooking will cause them to lose their vibrant color and texture. Taste and adjust the seasonings as needed to ensure the stew is perfectly balanced in flavor.

Mushroom Chicken Stew

Mushrooms are my favorite thing to chew on in any dish, and I love to include them in my recipes whenever possible!

The earthy tone of the mushrooms complements the stew beautifully, adding a new depth and contrasting flavor profile to the chicken recipe. Saute the mushrooms in some oil or butter over medium-low heat until they are soft and golden brown. Then stir them in the simmering stew and cook them for an additional 15 minutes to create a delicious mushroom chicken stew.

Ingredients

  • 2 tbsp / 30 ml Cooking Oil
  • 8 pieces Chicken Thighs and Drumsticks
  • 1 tsp / 6 g Salt (Divided)
  • 1 tsp / 2 g Black Pepper (Divided)
  • 2 tbsp / 28 g Butter
  • 1 inch Ginger (Julienne)
  • 5 cloves Garlic (Minced)
  • 1 large Onion (Cubed)
  • 3 medium-size Carrots (Diced)
  • ½ tsp Rosemary
  • ½ tsp / 1 g Thyme
  • 2 small-size Bay Leaves
  • 3 tbsp / 22 g All-Purpose Flour
  • 1 liter / 1,000 ml Chicken Stock
  • ½ kg / 500 g Potatoes (Diced)
  • 1 cup / 145 g Frozen Peas
  • 2 tbsp / 2 tbsp Coriander (Chopped)

Instructions

Prepare The Chicken

  • Place a cooking pot or Dutch oven on the stove over high heat.
  • Pour 2 tbsp of cooking oil into the pot.
  • Using tongs, carefully place 8 pieces of chicken thighs and drumsticks into the large pot.
  • Cook the chicken until they are golden brown. Season the chicken with salt and pepper.
  • Flip the chicken once one side is browned. Add a little more salt and black pepper.
  • Once both sides are browned, transfer the chicken pieces to a plate and set aside.

Saute Ginger, Garlic and Vegetables

  • In the same pot, add 2 tbsp of butter. Reduce the heat from high to medium.
  • Add 1-inch julienne ginger and 5 cloves of minced garlic to the pot.
  • Add 1 large cubed onion and 3 medium-sized diced carrots to the pot. Stir to coat the vegetables with butter and leftover chicken bits.
  • Sprinkle ½ tsp of salt and ½ tsp of black pepper over the vegetables.
  • Add ½ tsp of rosemary, ½ tsp of thyme, and 2 small bay leaves to the stew.
  • Stir to mix the seasonings with the vegetables.

Add Flour and Chicken Stock

  • Add 3 tbsp of all-purpose flour to the stew. Stir to coat the vegetables with the flour.
  • Pour a little stock of the 1-liter chicken stock over the mixture and stir to avoid lumps.
  • Bring the mixture to a boil.

Add The Cooked Chicken and Potatoes

  • Take the chicken pieces you cooked earlier and place the chicken to the pot.
  • Add ½ kg of diced potatoes with the chicken.
  • Pour in the remaining chicken stock to cover the ingredients.
  • Stir and bring it to a boil.
  • Reduce the heat from medium to low, cover, and let it simmer for 15-20 minutes.

Add Peas, Garnish and Serve!

  • Remove the lid and stir the dish well. Add 1 cup of frozen peas to the stew.
  • Stir and let it simmer for another 4-5 minutes.
  • Garnish the dish with 2 tbsp of chopped coriander and stir the stew to mix everything.
  • Serve the best chicken stew recipe and enjoy it hot!
